This first month of experiencing the Clean Eating Challenge has been beneficial to re-consider the way I used to eat and measure (in a good way) my servings. I began my post-knee surgery recovery process one week before the CEC began and the timing couldn’t be better.
Now that I am constantly learning nutritional facts, my favorite topic so far has been the “colorful plate”, which basically allows us to play with colors, sizes, and textures that make the perfect combo for the sight and taste senses.
Sincerely, not every day I have the discipline to do this but when I have the chance I decorate the plate in such a way that makes me proud to share with my family members to show them that eating healthy should be fun and not boring as everyone thinks.
