Gabe – Counting my Blessings

It is hard to believe that November has come and gone and now we are approaching December. As we are in a season of Thanksgiving, I have been reflecting on everything I am thankful for- The Lord and my faith, my family, my job, our freedom… an abundance of blessings that I do not deserve. I am also very grateful and blessed to be participating in the Viva Fresh Clean Eating Challenge this year. It is just 6+ weeks in and I feel better than I have in years! I have renewed energy, a clearer mind and an overall improved sense of wellbeing.

The last couple of weeks have been busy ones for the Chavez family. Two weeks ago, we went to Government Canyon State park and hiked a 5-mile trail up into the hills in West San Antonio. Last week, we went an hour into the hill country and chopped down our very own Christmas tree- That was exciting! After our tree-cutting excursion, we continued another mile to the Northwest and headed to Lost Maples State park where we did an 8-mile hike. I was very impressed as all of us finished… Even my 4-year-old daughter!

Throughout all of this, I have still been able to maintain and stick to the clean eating goals and guidelines… 50-75% fresh fruits and vegetables and the rest of the meal- lean meats and minimally processed other foods (4 ingredients or less). We even changed up our Thanksgiving table this year to include healthier options that the whole family could enjoy! I am really looking forward to December, Christmas and the next 4+ months of the CEC. I wish everyone a blessed holiday season as well!
